Appalachian Trail Cookies

Cyclist and chef Michael Pfab, owner of Ciao, Italian restaurant in Allentown Pennsylvania created these delicious cookies that are also very good for you! “So many of the energy foods you buy are loaded with artificial ingredients, I created these cookies while running the kitchens for summer camps in North Carolina. I saw what the hikers were eating and thought, ”Turn that into a cookie, and you’ve got all you need to keep going,’ I’ll make 60 of these at the restaurant and take them all home.” – Pfab.

¼ cup shortening
¼ cup unsalted butter
½ cup dark brown sugar
½ cup granulated sugar
1 large egg
½ cup shredded coconut
¾ cup plus 1 tablespoon pastry flour
pinch salt
pinch baking soda
pinch ground cinnamon
2 cups old-fashioned oats
½ cup raisins
⅓ cup roasted unsalted peanuts
⅓ cup M&M candies

Blend shortening, butter, brown sugar and sugar. Add egg and mix well. Add coconut, flour, salt, baking soda and cinnamon. Mix only until blended. Fold in oats by hand, then mix in raisins, peanuts and M&Ms. Spoon out in equal portions on parchment lined baking pan. Bake at 360 degrees for 10 to 12 minutes, or until golden brown.

John Bryan

John Bryan’s Legacy
Some sad news came two weekends ago as South Carolina’s cycling community lost one of its best.  John Bryan passed away June 27 after a seven year battle with lymphoma.

Bryan was ahead of his time as a founder of the Freewheelers Bicycle Club and a regular bicycle commuter in the 1970s.  But he may be best known for the Assault on Mt. Mitchell.  Every year cyclists from across the US prepare for this ride – possibly one of the country’s most challenging - a ride John created and directed for over 30 years.

A little over a year ago, the Spartanburg Herald-Journal ran the following editorial recognizing John’s contributions to the Spartanburg community:

The Assaults…show off the assets of our area. If public relations consultants sat down to dream up an event that would build a positive image for this area, they would be unlikely to come up with a better idea than an internationally recognized bicycle ride that started in Spartanburg’s growing downtown area, proceeded through our scenic northern section of the county and worked its way into the mountains.

As the popularity of cycling grows because of its fitness and low-cost transportation benefits, the Assaults will become more important in raising the profile and prestige of Spartanburg. That contribution to the culture of cycling and the reputation of this community will be part of John Bryan’s legacy to Spartanburg.

Please keep John’s family in your thoughts and thank them for sharing John with the cycling community over these many years.

On Sunday, August 9, family and friends of John Bryan are invited to celebrate his life.  The event will take place at Bike Worx bicycle shop, 1321 Union St, Spartanburg at 2pm.  Following will be a 4-mile ride of silence.  Click here for more information.
